Mature limes have been used in Goan Cuisine’s Lime Pickle, which contains all the zest and sourness of the fruit along with the warmth of chilli and earthy cumin and fenugreek. You’d be surprised how useful Lime Pickle can be…it’s delicious with curries or skewers of grilled pork, chicken, fish and lamb, and can also be used with barbecued meats.
