The passionate Australian–Italian chef, has worked under some of Australia’s most influential names including Neil Perry at Rockpool and will show you his fancy knifework but most importantly how to translate it to your own kitchen.

On October 12, using his artillery of Japanese and Global knives – some of the world’s finest utensils – Chef Simonetta will not only fill you in on how to purchase the best produce but also how to select the right knives for it and sharpen them on a stone. Breaking down and pin boning a whole salmon, he'll then create two key dishes ideal for summer entertaining – Houjcha Poached Salmon and the heavenly Tea Poached Salmon
